Power Stew

Turkey and  Veggies


  • 12 oz package extra lean frozen turkey meatballs
  • 1/2 cup low sodium chicken broth-divided
  • 6 stalks asparagus, diced
  • 1 large broccoli head, chopped
  • 1/2 large red onion, sliced
  • 2 Tbsp fresh basil, chopped
  • 1 tbsp fresh dill, chopped
  • Black pepper, to taste
  1. Spray olive oil cooking spray in a nonstick skillet, set on high. Brown meatballs for 15 min. Lower heat
  2. Add 1/4 cup borth and let simmer for 15 minutes
  3. Add remaining broth and vegetables, stir well and let cook for 15 min
  4. Add hers and pepper, mix well and serve.

(Alternatively, you ca place all ingredients in a slow cooker and cook on low for one hour)
