Turkey and Veggies
Ingredients:
- 12 oz package extra lean frozen turkey meatballs
- 1/2 cup low sodium chicken broth-divided
- 6 stalks asparagus, diced
- 1 large broccoli head, chopped
- 1/2 large red onion, sliced
- 2 Tbsp fresh basil, chopped
- 1 tbsp fresh dill, chopped
- Black pepper, to taste
- Spray olive oil cooking spray in a nonstick skillet, set on high. Brown meatballs for 15 min. Lower heat
- Add 1/4 cup borth and let simmer for 15 minutes
- Add remaining broth and vegetables, stir well and let cook for 15 min
- Add hers and pepper, mix well and serve.
(Alternatively, you ca place all ingredients in a slow cooker and cook on low for one hour)
